Je ne sais pas si c&rsquo;est \u00e0 cause de la surp\u00eache(*) mais en plus d&rsquo;\u00eatre sauvages ils \u00e9taient vieux. Comment je le sais? On peut conserver les tentacules pour les ajouter \u00e0 la farce apr\u00e8s les avoir fait revenir dans de l\u2019huile d\u2019olive avec une gousse d\u2019ail et les couper tr\u00e8s finement. Mais l\u00e0 j&rsquo;avais d\u00e9j\u00e0 beaucoup trop de farce alors je me suis abstenu.<\/p>\n<p>Dans un saladier m\u00e9langer le veau hach\u00e9, le chorizo mix\u00e9 l\u2019ail et l\u2019oignon hach\u00e9s, l\u2019\u0153uf, le persil \u00e9minc\u00e9, le lait et la chapelure de pain. Si vous voulez ajouter les tentacules, c&rsquo;est maintenant.<br \/>\nSalez et poivrez et ajoutez le piment d&rsquo;Espelette.<br \/>\nGarnir les encornets avec la farce en laissant de la place pour les fermer avec un cure-dents.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C. Placer les encornets dans un plat et les recouvrir de sauce tomate. Cuire au four durant 30 minutes environ \u00e0 180\u00b0C.<\/p>\n<p>Servir avec des p\u00e2tes, des p\u00e2tes ? Oui mais des spaghettis ! Accompagn\u00e9s d\u2019un peu de parmesan\u2026<\/p>\n<p>(*) mon id\u00e9e c&rsquo;est que la survie de l&rsquo;esp\u00e8ce est due aux jeunes calmars plus agiles \u00e0 \u00e9viter de se faire attraper, il ne reste que les vieux que les p\u00eacheurs peuvent choper. Ou peut-\u00eatre simplement que les normes pour les mailles des filets laisse passer les petits. Mais j&rsquo;affabule et je dois \u00eatre \u00e0 c\u00f4t\u00e9 de la plaque, s\u00fbrement&#8230;<br \/>\n(**) Je confirme, tendres et go\u00fbteux.
