La mousse d&rsquo;avocat peut \u00eatre pr\u00e9par\u00e9e un peu \u00e0 l&rsquo;avance, pas plus d&rsquo;une ou deux heures.<\/p>\n<p>Une super entr\u00e9e que j&rsquo;ai servi le soir du r\u00e9veillon. Ils doivents \u00eatre l\u00e9g\u00e8rement compot\u00e9s.<\/div>\n<div>D\u00e9couper les avocats et mixez les avec le lait de coco pour obtenir une joli mousse assez \u00e9paisse mais l\u00e9g\u00e8re. On peut y ajouter du piment d&rsquo;Espelette en poudre si le chorizo est doux.<\/div>\n<div>Coupez le chorizo en d\u00e8s, m\u00e9langez avec la farine, le beurre, et les miettes de sp\u00e9culoos. Etalez sur une plat \u00e0 four et enfournez 5 minutes sous le grill. R\u00e9servez une fois sorti du four.<\/div>\n<div>D\u00e9cortiquez les gambas et po\u00ealez les dans un wok \u00e0 l&rsquo;huile d\u00a0\u00bbolive et une noix de beurre, saupoudrez de piment d&rsquo;Espelette en poudre.<\/div>\n<div>Dressez votre assiette, faites un lit de poivrons, d\u00e9posez les gambas et saupoudrez de crumble de Chorizo.
